Tub Tim Grob Is Heavenly Rubies In Coconut Milk With Ice!

Literally translated, "Tub Tim" means "Ruby" and "Grob" means "Crunchy" ... The influence of this dessert is supposed to be from pomegranate seeds.

Most people will use either jicama or water chestnuts to get that effect

I love this thai dessert as it can be so refreshing when you have it with your friends on a hot day!

Tub Tim Grob Thai Recipe:

From The Thai Kitchen:

* Chopping Board
* Cleaver
* Ladle
* Mixing Bowls
* Saucepans
* Strainer

Thai Ingredients:

* 1 kg jicama or waterchestnuts (small cubes)
* 500g tapioca flour
* 2 cups hot water
* 1 cup sugar
* 1/2 tsp red coloring
* 1/2 tsp green coloring

Syrup Ingredients:

(A)
* 2 cups water
* 1 tsp jasmine essence
* 1.5 - 2 cups sugar

(B)
* 1.5 cups coconut cream
* 1 tsp ground salt

Method:

1. Dissolve 1 cup of sugar into the 2 cups of hot water and let cool

2. Divide the cooled syrup into 2 separate bowls

3. Add the red coloring into one bowl and the green coloring into the other

4. Peel and cube jicama or waterchestnuts and place on a clean cloth so that excess water is absorbed

5. Place half the cubed jicama or waterchestnuts into the red colored bowl and the other half into the green

6. Leave for half an hour and drain

7. Divide and place tapioca flour into 2 separate bowls (250g in each bowl)

8. Coat the cubes in tapioca flour well and shake off excess

9. Repeat process for the green colored cubes

10. To blanch the jicama, bring a pot of water to boil

11 Blanch the cubed jicama in small batches until they float to the surface

12. Scoop them out with a strainer and put them in a bowl of cold water to prevent them sticking together

13. To prepare syrup, cook the Ingredients (A) together - transfer to a bowl

14. To prepare coconut milk, cook the Ingredients (B) together - transfer to a bowl

15. To serve; put a combination of red and green blanced jicama or waterchestnuts into a serving bowl, spoon enough syrup and coconut milk to taste

16. Add ice and enjoy!
