Salmon Patties - Thai Style Fish Cakes Recipes Mix With A Bit Of Fusion

When I was last at Queen Victoria Market, I bought a whole salmon. That is when I thought about using the salmon meat to conjure up this fusion fish cake recipe.

This dish makes a fantastic afternoon snack and was absolutely delicious!

Salmon Patties Thai Recipes: (Fusion Style)

From The Thai Kitchen:

* Blender
* Cleaver
* Ladle
* Mixing Bowl
* Wok or deep fryer

Thai Ingredients:

* 500g Salmon fillet (skinless and roughly chopped)
* 1 slice of bread, lightly toasted (grind roughly in the blender)
* 1 whole egg
* 1 garlic (crushed)
* 1 french shallot (diced)
* 2 spring onions chopped (white part only)
* 3-4 Chinese celery chopped (stem part only)
* 3-4 fresh coriander (chopped)
* 1-2 tbs red curry paste
* 1 tsp ground black pepper
* 3 tbs pine nuts (lightly toasted and crushed)

Seasoning Ingredients:

* 1 tsp fish sauce
* 1 tbs light soy sauce
* 1 tbp oyster sauce
* 1/2 tsp salt

Method:

1. Prepare the salmon
2. Prepare the Thai Ingredients as per listed above
3. In a large mixing bowl, combine the salmon, the rest of the Thai Ingredients and the Seasoning Ingredients
4. Wet your fingers and massage the ingredients through so that they are well mixed
5. Roll mixture into golf ball size -- then flatten out slightly into rissoles
6. Deep fry each piece in medium hot oil
7. Drain cooked Fish Cakes on paper towel
8. These Fish Cakes are best served with sweet chilli sauce

* Before rolling the mixture, test fry a small amount and adjust taste if necessary before completing the whole process

Sweet Chilli Sauce to accompany Salmon Fish Cakes:

Combine The Following:

* Quarter cup Thai Sweet Chilli Sauce
* Half diced lebanese cucumber
* 2 tbs crushed peanuts
* Coriander (as garnish)
