Pla Lard Prik - Thai Fried Fish Recipies With Sweet And Sour Tamarind Sauce

You will find Pla Lard Prik or Thai style fried fish with sweet and sour tamarind sauce in most Thai restaurants.

I remember we used to have an English customer who would come in to our restaurant every week and order this dish with jasmine rice only. When he came in with another friend, they ordered 2 of this same dish. He thoroughly loves it and just cannot wait to have it on his next visit.

Pla Lard Prik Thai Food Recipes

From The Thai Kitchen:

* Cleaver
* Ladle
* Mixing Bowl
* Mortar and Pestle
* Saucepan
* Wok

Thai Ingredients:

* 360g fish fillet
* 4 tbs plain flour
* 1 small onion (sliced)
* 1 head pickled garlic (thinly sliced)
* 1-3 tsp fresh chillies (pounded)
* cooking oil

Seasoning Ingredients:

* 5-7 tsp fish sauce
* 30g palm sugar

Tamarind Juice:

* 60g tamarind pulp
* 500mls water

Method:

1. Coat fish fillet with plain flour in a mixing bowl, then shake off excess and leave aside

2. Heat oil in saucepan on high heat and fry onion till golden and slightly brown and fragrant.

3. Add sliced pickled garlic and pounded chillies

4. Add 300mls of tamarind juice and the seasoning sauces

5. Bring back to boil and immediately reduce to gentle simmer

6. When mixture is slightly thick and syrupy, taste and adjust accordingly

7. Leave mixture in saucepan aside

8. In a wok, heat enough cooking oil to shallow fry the fish fillet

9. When fish is cooked and golden brown, place fish on a serving plate

10 Spoon the sauce over the fish, garnish and serve hot
