Pad Thai Recipe - Thai Style Fried Rice Noodle With A Twist!


 

Pad Thai is a Thai style stir-fried noodle dish with eggs, fish sauce, tamarind juice, red chilies, bean sprouts, shrimp, tofu and garnished with crushed peanuts and coriander. This is one Thai food that my friends absolutely love - I know because they tend to request for this dish over and over again.

You will need to get the freshest ingredients for this Thai recipe.
The secret is in the sauce - get the blending and the balancing right and you are three quarters way there!


Pad Thai Thai Recipe:

Appliances:

* Cleaver
* Ladle
* Mortar and Pestle
* Saucepan
* Wok

Ingredients:

* 1 packet dried Thai Rice Stick noodles
* 4 large eggs
* 2 large french shallots (sliced)
* 4-6 cloves garlic (chopped)
* 1 cup fried tofu (thinly sliced)
* 6 tbs dried prawns
* 1 bunch garlic chives (4 cm length)
* 1/2 kg bean shoots (tailed)
* 1/4 cup preserved turnip (diced)

Seasoning Ingredients - to taste:

* fish sauce
* light soy sauce
* white pepper

Garnishing Ingredients:

* ground cooked peanuts
* ground dried chillies
* fresh bean shoots
* lemon wedges
* fried shallots
* garlic chives

Pad Thai Sauce Ingredients:

* 1 litre water
* 130g tamarind pulp
* 350g palm sugar
* 1 tbs tomato paste
* 1/4 cup fish sauce and/or light soy sauce

How To Make The Sauce:

1. Mix the 130g of tamarind pulp with the 1 litre of water to extract the flavor of the tamarind.

2. Sieve the tamarind water

3. Place the rest of the ingredients into the tamarind water in a saucepan

4. Cook and simmer until mixture is reduced by half (takes approx 50 minutes)

5. Sauce should be slightly sticky and syrupy

6. The sauce is now ready to be used.

How To Cook:

1. Soak the dried Thai rice noodles in warm water for 20-30 minutes

2. Soak dried prawns in water, drained and pound lightly with mortar and pestle

How To Cook For 1 Serving Only:

3. Heat oil on medium heat, then fry some shallots and garlic till golden brown and fragrant

4. Add 4-6 tbs Pad Thai sauce, then add a handful of drained noodles

5. Stir the noodles until it has absorbed most of the sauce

6. Add 1-2 tbs dried prawns, 1 tbs preserved turnip and 2 tbs fried tofu

7. Turn up the heat and stir the mixture in the wok so that they are well mixed together

8. Pushing the ingredients to one side of the wok, heat up a bit more oil to cook the egg

9. Add 1/2 handful of bean shoots and 1-2 tbs of garlic chives

10 Continue mixing all ingredients together

11 Add seasoning ingredients to taste

12 Serve the cooked noodles with all the "Garnishing Ingredients".

Insider Secret Tips:

1. 1 packet of noodles will make about 4 servings

2. For best results, it is highly recommended that you cook individual servings instead of the whole packet of noodles in the one go
