How To Make Congee For Breakfast!


 

Congee or more commonly known as Jook in Thailand is often taken in the morning as breakfast like cereals and oats are taken in the Western world.

Jook is typically cooked plain and then you just add whatever meat or seafood and incidentals you desire

I like to use sushi rice since sushi rice is starchier resulting in a creamier jook.

Thai Jook Recipe:

From The Thai Kitchen:

* Cleaver
* Ladle
* pot


Thai Ingredients:

* 1 cup sushi rice
* 10 cups water
* 100g mince pork
* 1-2 fresh scallops
* 3 prawns
* 80g baby calamari

Sauce Ingredients:

* 1 tbs fish sauce
* 1 tbs light soya sauce
* 1 tbs oyster sauce
* 1/4 tsp salt
* 1/2 tsp white pepper

For Garnishing:

* 1 tsp garlic in oil
* 1 tsp fried shallots
* 1 spring onion
* 1 coriander


Method:

1. Prepare and mince the scallops and the prawns together

2. Wash and rinse sushi rice.

3. Add water and bring to the boil

4. Reduce heat and add mince pork

5. Continue simmering on low heat uncovered for 1-2 hours, stirring occasionally

6. At the end of the cooking time, add all the sauce ingredients, the mince prawns and scallops and baby calamari

7. Taste and adjust flavour if needed

8. Serve in a bowl or shallow plate

9. Add the Garnishing

10. Enjoy - especially good for you when you are not feeling the best
