How To Prepare Thai Style Chicken Rice And Sauce ---


Thai Style Hainanese Chicken Rice Preparation is another very important step in making the favorite street food in Thailand - Khao Man Gai.

Literally translated in Thai, "Khao means Rice"; "Man means Fats" and "Gai means Chicken" which basically means that to get this dish to taste authentic, you need to use some rendered chicken fats - meaning you literally fry the chicken fats to release its oil and then use this oil to cook the rice so that the flavor of the chicken gets infused into the rice - hence the term 'chicken rice'. Getting the rice cooked to perfection is what separates why some shops attracts more loyal customers that the others.

The Thais love their sauces and for this dish especially, the sauce preparation plays a very important role to making this dish complete.

Part 2 - Chicken Rice Preparation:

From The Thai Kitchen:

* Ceramic Bowl
* Chopping Board
* Knife
* Rice Cooker
* Wok

Thai Ingredients:

* 4 cups Thai Jasmine Rice
* 1 big clove garlic (crushed)
* 3 slices ginger
* 2 tbs rendered chicken fats

Method To Prepare The Rice:

1. Wash the jasmine rice well and drain

2. In a wok, heat the chicken fats and fry the garlic and ginger till fragrant

3. Add the washed and drained rice and fry on high heat until the rice is mixed through

4. Transfer the rice to the rice cooker

5. Add the stock from the chicken preparation to the 4 cup mark (you can see the mark at the side of the rice cooker)

6. Once the rice is cooked, it is ready to be served..


Part 3 - Sauce Preparation:

From The Thai Kitchen:

* Ceramic Bowl
* Knife
* Chopping Board
* Mortar and Pestle

Thai Ingredients:

* 30g fresh ginger
* 1 med clove garlic
* 2 small coriander roots
* 1 tbs fermented yellow bean paste
* 1.5 tsp sugar
* 2 tbs light soy sauce
* 1 tbs maggi seasoning
* 1/2 tsp dark soy sauce
* 1/2 tbs oyster sauce
* 1 tsp lime juice
* 2 tbs water
* 1-2 small fresh chillies (chopped)

Method To Prepare The Sauce:

1. Using the mortar and pestle, pound ginger, garlic and coriander roots

2. Add the fermented yellow bean paste and continue to lightly pound till it is well mixed together

3. Add the rest of the ingredients

4. Taste and adjust flavoring if necessary

5. Serve
