Stir Fry Prawns With King Oyster Mushrooms Recipe:

 

From The Thai Kitchen:

* Cleaver
* Ladle
* Wok


Thai Ingredients:

* 6 medium size whole prawns (peeled and deveined)
* 2-3 tbs cooking oil
* 3 king oyster mushrooms (sliced)
* 1 french shallot (sliced)
* 1 clove garlic (crushed)


For Garnishing:

* 6 sprigs coriander
* 1 spring onion (chopped)


Sauce Ingredients:


* 1 tbs fish sauce
* 1 tbs light soy sauce
* 1 tbs oyster sauce
* 1 tsp sugar
* 1/4 tsp ground white pepper
* 1 tsp thai chilli jam
* 2 tbs stock or water


Method:

1. Prepare the prawns - peel, devein but leave the tail intact

2. In a wok, heat 2-3 tablespoon of oil on medium-hot heat 

3. Lower the heat to medium-low heat and stir fry the shallots before adding the garlic

4. When the shallots and garlic is slightly golden, add the prawns and then the mushrooms into the wok

5. Fry till the prawns is nearly cooked and the mushrroms softens slightly

6. Add the sauce ingredients into the wok with the prawns and continue frying

7. Taste for flavour and adjust if necessary

8. Place on prepared serving dish

9 Garnish with coriander and spring onions

10. Finally, serve hot with jasmine rice and enjoy !
