Spring Rolls (Meat) Thai Recipes:

From The Thai Kitchen:

* Cleaver
* Ladle
* Mixing Bowl
* Scissors
* Wok

Thai Ingredients:

* 900g minced pork
* 150g prawn meat (minced roughly)
* 200g vermicelli
* 100g fresh Shitake mushrooms (sliced)
* 20g dried black fungus
* 200g carrots (julienne)
* 1 medium brown onion (sliced)
* 3 cloves garlic (chopped)
* 4*(50 pieces) roll wrappers
* 1/4 cup cooking oil
* 2 spring onions (chopped)
* 1 sprig coriander (chopped)

Seasoning Ingredients:

* 3-4 tbs Fish Sauce
* 3-4 tbs Light Soy Sauce
* 2 tsp Oyster Sauce
* 1 tsp Sugar
* 1 tsp white pepper

Method:

1. Soak the vermicelli and the dry black fungus separately in warm water until soft

2. Drain the vermicelli and then cut it into shorter length with a pair of scissors

3. Drain the black fungus and slice thinly

4. In the wok, heat the oil before adding garlic and onions and then frying till fragrant and brown

5. Add the minced pork, prawns, black fungus, carrots, vermicelli and the fresh Shitake mushrooms into the wok

6. Stir and mix well

7. Add the seasoning ingredients making sure you taste and adjust the flavoring if necessary

8. Add in chopped spring onions and coriander

6. Allow the cooked ingredients to cool before commencing on the rolling process
